Ingredients:
2 Tbsp or 2 pkg dry yeast
1/2 cup warm water
1 1/4 cups cooked, mashed butternut squash (Peel a raw squash, cut into chunks, place in a bowl, cover with wrap, and steam for about 5 minutes in the microwave. Mash with a fork or potato masher.)
1 cup warm milk
2 eggs, beaten
1/3 cup melted butter or margarine
1/3 cup sugar
1 tsp salt
7 cups flour (1/2 white flour and 1/2 wheat flour if desired)
Instructions:
In a mixing bowl dissolve yeast and sugar in warm water. Add squash, milk, eggs, butter, and salt. Mix well. Gradually add 3 1/2 flour, beat until smooth. Add enough remaining flour to form a soft dough.
Turn onto a floured surface and knead until smooth, about 5 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise until doubled (about 1 hour). Punch down. Shape into 3 loaves.
Place in greased bread pans, turning once to grease the tops. Cover and let rise again until doubled (about 30 minutes). Bake in a preheated 375 degree oven for 25-30 minutes, until tops are golden brown. Remove from pans and cool on a wire rack.
