Baked Oatmeal

Ingredients: 
2 cups quick cooking oats
1 1/3 cup brown sugar
1 1/2 tsp. Baking powder
1/2 tsp. salt
2 cup vanilla soy milk
2 ripe banana's mashed
2 Tbsp. vegetable oil
1/4 tsp. cinnamon
Instructions: 
1.) Oven @ 350*F. Grease an 8x8 pan with cooking spray.
2.) Add all of the ingredients into a large bowl, and whisk together until thoroughly combined.
3.) Pour the mixture into prepared pan, and bake for 30 minutes until puffed up and golden brown.

A delicious warm and hearty breakfast.  I concocted this recipe in order to accomodate some of my vegan customers.  It is fantastic if you add fresh fruit or nuts.
