Ingredients:
16 ounces canned yams in syrup
1 stick of butter
2 eggs
1.5 cups sugar
3 tablespoons flour
5 ounces evaporated milk
1 teaspoon lemon extract
1 teaspoon vanilla extract
1 bag small marshmallows
Instructions:
Put yams and syrup in saucepan, cover and simmer for 60 minutes
Drain yams
Whip butter and yams together until fluffy
Add remaining ingredients
Whip until fluffy
Pour into greased, 1-quart casserole dish
Bake 1 hour at 375º
Sprinkle marshmallows across top for last 15 minutes of baking
